Lion's Mane Brownies

Lion's Mane Brownies (Sunflower Seed and Oats)

Indulge in these fudgy rich chocolate brownies with the added benefits of functional mushroom powder. This wholefood recipe uses sunflower seeds and oats as the base. They are earthy, have a rich chocolatey flavor and are easy to make. They are dairy and refined sugar free.

Ingredients:

150g Sunflower Seeds
50g Oats
25g Cacao Powder
50g Coconut Sugar
50g Chocolate Chips
50g Coconut Oil
2 Eggs
½ tsp Bicarbonate Soda
½ tsp Vanilla
Pinch of Salt
1 tbsp Evolution Botanicals Lion’s Mane Mushroom Extract Powder

Thermomix Method:
1. Preheat the oven to 180 degrees. Line a rectangle baking dish with baking paper.
2. Add the sunflower seeds and oats to the mixing bowl and mill on speed 10 / 10 seconds.
3. Add cacao powder, coconut sugar, bicarb soda, salt, lion's mane and combine dry ingredients speed 5 / 5 seconds.
4. Add coconut oil, eggs and vanilla and combine wet ingredients speed 5 / 10 seconds.
5. Add the chocolate chips and combine speed 4 / 10 seconds using the reverse setting.
6. Bake in the oven for 8-12 minutes, checking frequently. They should be slightly undercooked to ensure they have a fudgy center.
7. Allow to cool completely before slicing. If they are still hot they may crumble and fall apart. Store in a sealed container in the fridge.

 

Lion's Mane Brownies

 

Blender Method:
1. Preheat the oven to 180 degrees. Line a rectangle baking dish with baking paper.
2.Add the sunflower seeds and oats to a blender or food processor and mill into a fine flour.
3. In a large mixing bowl add the sunflower seed oat flour, cacao powder, coconut sugar, bicarb soda, salt, lion’s mane and combine using a wooden spoon.
4. Add coconut oil, eggs and vanilla and stir wet ingredients until well combined
5. Sprinkle over the chocolate chips and mix well.
6. Bake in the oven for 8-12 minutes, checking frequently. They should be slightly undercooked to ensure they have a fudgy center.
7. Allow to cool completely before slicing. If they are still hot they may crumble and fall apart. Store in a sealed container in the fridge.
